Why charcoal still matters
Gas is faster, cleaner and easier to run. It also does not do the one thing that makes a kebab taste like a kebab: the fat dripping onto hot coal and coming back up as smoke.
That is the entire argument, and it is why the grill gets lit hours before anyone orders. The footage above is our own kitchen, not a stock clip.

How much does BBQ cost in Karachi at Sufraq?
Skewers run from Rs. 549 for the Tikka Leg up to Rs. 999 for the Turkish Kebab. Most of the middle of the card, the Malai Boti and Reshmi Kebab, sits at Rs. 699. For a table, the feast platters on the platters menu work out better per person than ordering skewers one at a time.
Is it real charcoal or a gas grill?
Real charcoal, lit by mid-afternoon so it is properly ashed over before the evening rush. That is the whole reason the kebabs taste the way they do, and it is why the grill is the last thing we would ever swap out for something faster.
Which BBQ item should I order first at Sufraq?
If it is your first time, the Malai Boti at Rs. 699. It is creamy rather than chilli-hot, so it tells you what our marinade does without the heat getting in the way. Order the Bihaari Boti next if you want spice, or the Turkish Kebab if you want the one that eats like a meal on its own.
Do you deliver BBQ late at night across Karachi?
Yes, until 4 AM every night. Charcoal food travels better than most people expect if it is packed hot and eaten within the half hour, and that is the window most of Karachi is ordering in anyway.
Can I get BBQ and mandi in the same order?
Yes, and it is the order we would actually recommend for a group. The mandi feeds the table, the charcoal plates give it something to argue over. One delivery, one bill, and it is the combination we built the menu around.
